It took one taste of this spaghetti squash spaghetti recipe for us to know that we would grow spaghetti squash in our garden forever!

It’s an excellent gluten-free, grain-free alternative to spaghetti that still provides the traditional tastes of this Italian dish.

In lieu of pasta noodles, we process whole spaghetti squash to create “noodles” of our own!

Tips for Making Spaghetti Squash Spaghetti

We pack as much nutrition into this meal as possible by tossing in handful of dehydrated carrots, celery, bell peppers, and summer squash and zucchini.

It makes the meat sauce extra hearty—and healthy.

Don’t be tempted to cook the squash right side up. It’s very important to flip them upside down as they bake!

This spaghetti squash spaghetti recipe is gluten-free, grain-free, and dairy-free. We maximize the nutrition by tossing in handfuls of dehydrated vegetables!

Ingredients

Scale
  • 1 lb ground turkey (or beef)
  • 2 tablespoons sausage seasoning (or spices of choice)
  • (2) 24-oz jars of pasta sauce
  • 1/4 cup dehydrated, shredded zucchini (optional)
  • 1/4 cup dehydrated, shredded carrots (optional)
  • 3 tablespoons dehydrated, chopped celery (optional)
  • 3 tablespoons dehydrated, chopped bell peppers (optional)
  • 2 large spaghetti squash
  • Olive oil spray
  • Salt
  • Pepper

Instructions

  1. Brown your meat. Drain. Season with sausage seasoning or your favorite spices.
  2. Add both jars of pasta sauce.
  3. Mix in all of the dehydrated vegetables (if using).
  4. Lower to a simmer. Secure the lid, and allow to simmer on low as the spaghetti squash cooks.
  5. Preheat your oven to 400 degrees F.
  6. Cut your spaghetti squash lengthwise, and spray with olive oil.
  7. Lightly season with salt and pepper.
  8. Place upside down on a baking sheet, and bake for 45 minutes.
  9. When done, use tongs and a fork to scrape the flesh out of the squash. It will pull apart as “noodles.”
  10. If you like, season the noodles with a teaspoon each of garlic powder and onion powder.
  11. Top with your meat sauce, and serve.

Notes

If you would like to make the sausage seasoning, here is the bulk-sized recipe for a quart jar:

  • 1 cup sea salt
  • 1 cup pepper
  • 1 cup sage
  • 1 cup basil
  • 1/2 cup onion powder
  • 1/4 cup marjoram

Use 1-2 tablespoons per pound of meat.
