How to Decrystallize Honey [Without Cooking It]

Crystallized honey poses a tricky problem. It requires heat to return it back to it’s liquid form, but too much heat will damage the fragile nutrients that make raw honey so beneficial!

How can we apply just the right amount of heat? With a dehydrator. 🙂

Why I Use a Dehydrator to Decrystallize Honey

Using a dehydrator to decrystallize honey is a simple, effective, and temperature-controlled method.

Here’s why I rely on this technique:

  • Temperature control: Dehydrators can maintain steady temperatures below 100°F, preventing any accidental overheating that would otherwise destroy honey’s beneficial properties.

  • No need for a candy thermometer: Unlike stovetop heating, dehydrators don’t require a candy thermometer to monitor temperature, making it a worry-free option.

  • Multiple uses: Dehydrators are versatile kitchen tools, not only for decrystallizing honey but also making yogurt, proofing bread, and dehydrating fruits and vegetables.

Dehydrator Settings

Follow these steps to decrystallize honey using a dehydrator:

  1. Remove all of the dehydrator trays, and place the honey jars inside the dehydrator. (Make sure they’re in glass jars—not plastic. More info on that below.)
  2. Set the dehydrator’s temperature to around 95-100°F.
  3. Check honey’s consistency after approximately 2 hours. If it still appears chunky, leave it in for another hour and check again. You’re looking for a completely liquid state. Note that fully crystallized jars can take up to 5 hours.

Once the honey returns to a liquid state, store it in your pantry until needed, and enjoy!

Tip: Store Your Honey in Glass Containers

When purchasing honey, it’s best to store it in glass containers. If your honey comes in a plastic container, transfer it to a glass mason jar as soon as you get home.

Glass jars make it easier to decrystallize honey when needed because heating it in plastic containers isn’t recommended.
