Some dinners ask a lot of you. This one asks almost nothing.
You brown a little beef, layer everything into the slow cooker, and walk away while it does the heavy lifting. By the time you’re hungry, the kitchen smells like a roadside diner and dinner is basically finished.
Cowboy casserole is the kind of meal that fills a table without emptying your wallet. It leans on the cans and staples most of us already have sitting in the pantry.
It’s hearty, cheesy, and a little smoky, with layers of beef, potatoes, beans, and corn under a blanket of melted cheddar. Best of all, it reheats beautifully, so leftovers might just be the reason you make it in the first place.
Why You’ll Love This Recipe
It’s mostly hands-off. A few minutes of prep in the morning, and the slow cooker takes it from there.
It feeds a crowd. One pot stretches to feed a hungry family with enough left over for lunch the next day.
It’s budget-friendly. Ground beef, canned beans, corn, and potatoes keep the cost low.
It’s flexible. Swap in ground turkey, add a diced jalapeño, or use whatever cheese is in the fridge.
Kids actually eat it. It’s cheesy and mild, with just enough smoky flavor to keep grown-ups happy too.
Ingredients
- 2 lbs ground beef
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 (30 oz) bag frozen diced potatoes or hash browns, thawed
- 1 (15 oz) can ranch-style beans or pinto beans, drained
- 1 (15 oz) can corn, drained
- 1 (10 oz) can diced tomatoes with green chilies (like Rotel)
- 1 (10.5 oz) can condensed cheddar cheese soup
- 1 tablespoon chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups shredded cheddar cheese, divided
- Optional toppings: sour cream, sliced green onions, chopped cilantro
Instructions
Heat a large skillet over medium-high heat. Add the ground beef and diced onion, and cook until the beef is browned and the onion is soft, about 7 to 8 minutes.
Add the minced garlic and cook for one more minute, just until fragrant. Drain off any excess grease.
Lightly grease the inside of your slow cooker or give it a quick spray of nonstick cooking spray.
Spread the thawed potatoes across the bottom in an even layer. This gives the casserole a sturdy base.
Spoon the browned beef and onion mixture over the potatoes.
Add the drained beans, corn, and diced tomatoes with green chilies right on top.
In a small bowl, stir together the cheddar cheese soup, chili powder, smoked paprika, garlic powder, salt, and pepper. Pour this over everything in the slow cooker.
Gently stir the layers together just enough to combine, then smooth the top with the back of a spoon.
Cover and cook on low for 6 hours or on high for 3 hours, until everything is hot and bubbling and the potatoes are tender.
Sprinkle 1 cup of the shredded cheddar over the top during the last 30 minutes of cooking, then cover again and let it melt.
Once the cheese is gooey and melted, turn off the slow cooker and let the casserole rest for about 10 minutes so it can set up.
Scoop into bowls and finish with the remaining cheddar and any toppings you like, such as sour cream, green onions, or cilantro.
Tips and Variations
Swap the ground beef for ground turkey or plant-based crumbles to lighten things up.
For extra heat, toss in a diced jalapeño or a pinch of cayenne with the seasonings.
Leftovers keep in an airtight container in the fridge for up to 4 days and reheat well in the microwave or a covered skillet.
To freeze, cool completely and store in a freezer-safe container for up to 3 months, then thaw overnight before reheating.
