This easy Crockpot Cowboy Casserole layers ground beef, potatoes, beans, corn, and melted cheddar into one hearty, budget-friendly slow cooker meal.

Ingredients

  • 2 lbs ground beef
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 (30 oz) bag frozen diced potatoes or hash browns, thawed
  • 1 (15 oz) can ranch-style beans or pinto beans, drained
  • 1 (15 oz) can corn, drained
  • 1 (10 oz) can diced tomatoes with green chilies (like Rotel)
  • 1 (10.5 oz) can condensed cheddar cheese soup
  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups shredded cheddar cheese, divided
  • Optional toppings: sour cream, sliced green onions, chopped cilantro

Instructions

  1. Heat a large skillet over medium-high heat. Add the ground beef and diced onion, and cook until the beef is browned and the onion is soft, about 7 to 8 minutes.
  2. Add the minced garlic and cook for one more minute, just until fragrant. Drain off any excess grease.
  3. Lightly grease the inside of your slow cooker or give it a quick spray of nonstick cooking spray.
  4. Spread the thawed potatoes across the bottom in an even layer. This gives the casserole a sturdy base.
  5. Spoon the browned beef and onion mixture over the potatoes.
  6. Add the drained beans, corn, and diced tomatoes with green chilies right on top.
  7. In a small bowl, stir together the cheddar cheese soup, chili powder, smoked paprika, garlic powder, salt, and pepper. Pour this over everything in the slow cooker.
  8. Gently stir the layers together just enough to combine, then smooth the top with the back of a spoon.
  9. Cover and cook on low for 6 hours or on high for 3 hours, until everything is hot and bubbling and the potatoes are tender.
  10. Sprinkle 1 cup of the shredded cheddar over the top during the last 30 minutes of cooking, then cover again and let it melt.
  11. Once the cheese is gooey and melted, turn off the slow cooker and let the casserole rest for about 10 minutes so it can set up.
  12. Scoop into bowls and finish with the remaining cheddar and any toppings you like, such as sour cream, green onions, or cilantro.
