This Spanish rice skillet is a twist on the classic side dish. We add meat and powdered greens to make it a complete, one-pot meal.
Tips for Making This One-Pot Spanish Rice Skillet
Once you lower the skillet to a simmer and place the lid on, don’t stir it or lift the lid for the remaining cooking time.
This helps the rice fully cook within the liquid.

Since you won’t be stirring for a full 40 minutes, you do want to simmer this on a very low setting. Every stovetop cooks a little differently, so set it to whatever level you need to achieve the lowest simmer possible.
We always use green beans, but feel free to swap the green beans with whatever veggie or legume you like.
