How to Make This Ground Beef Taco Skillet

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned and fully cooked. Drain any excess fat if needed.
  2. Add the diced onion, bell pepper, and garlic to the skillet and sauté for 3-4 minutes, until softened.
  3. Stir in the rice, taco seasoning, chili powder, cumin, and a pinch of salt and pepper. Cook for 1-2 minutes to toast the rice and enhance the flavors.
  4. Pour in the diced tomatoes (with juices), green chilies, and beef broth. Stir to combine, making sure the rice is evenly distributed.
  5. Bring the mixture to a simmer, then cover and reduce heat to low. Let it cook for 15-20 minutes, or until the rice is fully cooked and the liquid has been absorbed.
  6. Once the rice is tender and the skillet is nearly dry, sprinkle the shredded cheese over the top. Cover again and let the cheese melt for 2-3 minutes.
