Easy Homemade Granola

If there’s one thing that’s a staple in our house, it’s granola.

Making granola at home is not only fun but also gives you the chance to customize the flavors and ingredients to your liking.

Today, I’m sharing my go-to granola recipe that’s perfect for breakfast, snacks, or as a topping for yogurt.

Ingredients You’ll Need

  • 3 ½ cups old-fashioned oats
  • 3 ½ cups Rice Krispies
  • 1 ½ cups chopped almonds
  • ½ cup coconut sugar (you can use brown sugar or a mix of white and brown sugars if you prefer)
  • ½ cup butter (1 stick)
  • ½ cup coconut oil
  • ½ tablespoon pumpkin pie spice (or you can use cinnamon)
  • ½ teaspoon salt

Optional Add-ins:

  • Dried fruit (like cranberries)
  • Dark chocolate chips

Instructions

1. Preheat Your Oven

Start by preheating your oven to 250°F. Granola needs to cook low and slow to achieve that perfect crunch.

2. Melt the Fats

In a small saucepan, melt together:

  • ½ cup butter
  • ½ cup coconut oil

Heat over low heat until completely melted and combined. Set aside.

3. Prepare the Dry Ingredients

In a large mixing bowl, combine:

  • 3 ½ cups old-fashioned oats
  • 3 ½ cups Rice Krispies
  • 1 ½ cups chopped almonds
  • ½ cup coconut sugar
  • ½ tablespoon pumpkin pie spice (or cinnamon)
  • ½ teaspoon salt

Mix these dry ingredients together well.

4. Combine Wet and Dry Ingredients

Drizzle the melted butter and coconut oil over the dry mixture. Stir thoroughly to ensure all the dry ingredients are evenly coated with the fats.

5. Bake the Granola

Spread the granola mixture evenly onto a baking sheet. Bake in the preheated oven for about 2 hours, stirring every 20 minutes to ensure even cooking and prevent burning.

6. Cool and Add Extras

Once the granola is golden brown and crispy, remove it from the oven and let it cool completely on the baking sheet.

If you’re adding dried fruits or chocolate chips, mix them in once the granola has cooled.

This will keep them from melting and ensure they stay nice and chunky.

7. Store and Enjoy

Wait until the granola has completely cooled, then store it in an airtight container.

It will keep well for about 2 weeks.

Tips and Variations

  • Experiment with Spices: Feel free to adjust the spices to your taste. Try adding a dash of nutmeg or a sprinkle of vanilla extract.
  • Go Nut-Free: If you prefer, you can omit the almonds or substitute them with other nuts or seeds.
  • Sweeten to Taste: Adjust the amount of coconut sugar based on your sweetness preference. You can other sweeteners, too, like honey or brown sugar.
