Creamy Chicken Tortilla Soup Crock Pot

Creamy Chicken Tortilla Soup Crock Pot

Some dinners ask a lot of you. This one asks almost nothing.

You toss a handful of ingredients into the slow cooker in the morning, walk away, and come home to a kitchen that already smells like you did something impressive.

The soup does the work while you handle everything else. By evening, you’ve got a pot of creamy, mildly spicy tortilla soup that tastes like it took real effort, even though most of your job was pushing a lid down and leaving.

It’s the kind of meal that makes a busy weeknight feel a little more forgiving. Warm, filling, and easy to make your own with whatever toppings you have on hand.

Why You’ll Love This Recipe

It’s genuinely hands-off. Ten minutes of prep, then the crock pot takes it from there.

The texture hits a sweet spot: creamy without being heavy, with just enough broth to feel like soup and not stew.

You can feed a crowd or stash leftovers, since it reheats beautifully and often tastes even better the next day.

It’s flexible. Swap the heat level up or down, pile on the toppings you love, and make it work for picky eaters and spice fans at the same table.

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts (or thighs)
  • 4 cups chicken broth
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can corn, drained (or 1.5 cups frozen)
  • 1 (14.5 oz) can diced tomatoes
  • 1 (10 oz) can diced tomatoes with green chiles (like Rotel)
  • 1 (4 oz) can diced green chiles
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt (plus more to taste)
  • 1/4 tsp black pepper
  • 4 oz cream cheese, softened and cubed
  • 1/2 cup heavy cream (or half-and-half)

For Serving

  • Tortilla strips or crushed tortilla chips
  • Shredded cheese
  • Sliced avocado
  • Fresh cilantro
  • Lime wedges
  • Sour cream

Instructions

Add the chicken breasts to the bottom of the crock pot.

Pour in the chicken broth, then add the black beans, corn, diced tomatoes, tomatoes with green chiles, and green chiles.

Add the diced onion and minced garlic.

Sprinkle in the cumin, chili powder, smoked paprika, salt, and pepper. Give everything a gentle stir to combine.

Cover and cook on low for 6 hours or on high for 3 hours, until the chicken is tender and cooked through.

Remove the chicken and shred it with two forks, then return it to the pot.

Add the cubed cream cheese and stir. Let it sit for a few minutes to soften, then stir again until it melts into the broth.

Pour in the heavy cream and stir until the soup looks creamy and smooth.

Taste and adjust the salt or spices to your liking.

Ladle into bowls and top with tortilla strips, shredded cheese, avocado, cilantro, a squeeze of lime, and a dollop of sour cream.

Tips and Variations

For a thicker soup, mash some of the beans against the side of the pot before serving.

Want more heat? Add a diced jalapeño or a pinch of cayenne with the spices.

Short on time in the morning? Combine everything except the cream cheese and cream the night before, keep it in the fridge, and pour it into the crock pot when you’re ready.

Leftovers keep in the fridge for up to 4 days. Reheat gently on the stove or in the microwave, adding a splash of broth if it’s thickened up.
