For the beef:
- 1 lb ground beef (80/20 works best)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon smoked paprika
- Salt and black pepper to taste
- 1 tablespoon olive oil
For the special sauce:
- ½ cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon yellow mustard
- 1 tablespoon dill pickle relish
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
For the salad:
- 6 cups romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 cup shredded cheddar cheese
- ½ red onion, thinly sliced
- ½ cup dill pickles, chopped
- 1 cup croutons (optional)
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and break it up with a wooden spoon.
- Season the beef with garlic powder, onion powder, smoked paprika, salt, and pepper. Cook for 8-10 minutes, stirring occasionally, until the beef is browned and cooked through.
- While the beef cooks, make the special sauce by whisking together the mayonnaise, ketchup, mustard, pickle relish, garlic powder, and onion powder in a small bowl. Taste and adjust seasoning if needed.
- Divide the chopped romaine lettuce among four bowls. This is your base.
- Top each bowl with a portion of the cooked ground beef while it’s still warm. The heat will slightly wilt the lettuce and start melting the cheese.
- Add the cherry tomatoes, shredded cheddar cheese, red onion, and pickles to each bowl. Sprinkle croutons on top if you’re using them.
- Drizzle the special sauce generously over each bowl. Serve immediately and let everyone mix their bowl to their liking.
