This strawberry balsamic bruschetta dip puts a fresh twist on the Italian classic by swapping tomatoes for sweet strawberries.

Ingredients

  • 2 cups fresh strawberries, hulled and diced small
  • 2 tablespoons fresh basil, finely chopped
  • 1 tablespoon balsamic glaze (not vinegar—the thick, syrupy kind)
  • 1 teaspoon honey
  • 1 tablespoon extra virgin olive oil
  • 1 small clove garlic, minced
  • Pinch of sea salt
  • Fresh black pepper to taste
  • 1 baguette, sliced and toasted, for serving

Instructions

  1. Dice the strawberries into small, uniform pieces—about the size of a typical tomato bruschetta dice. Transfer them to a medium mixing bowl.
  2. Add the chopped basil, minced garlic, olive oil, honey, and a pinch of salt to the bowl with the strawberries. Stir gently to combine everything without smashing the berries.
  3. Let the mixture sit for about 5 minutes at room temperature. This gives the flavors time to meld together and lets the strawberries release a bit of their juice.
  4. Right before serving, drizzle the balsamic glaze over the top. Add a few cracks of fresh black pepper.
  5. Give it one final gentle stir, then transfer to a serving bowl. Arrange toasted baguette slices around the bowl and serve immediately.
