This Ground Beef Pierogi Casserole combines all the flavors of traditional pierogi in an easy, family-friendly baked dish.

For the casserole:

  • 1 pound egg noodles
  • pounds ground beef
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 cups mashed potatoes (leftovers work great)
  • 2 cups shredded cheddar cheese, divided
  • 1 cup sour cream
  • 1 cup cottage cheese
  • ½ cup butter, melted
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • Fresh parsley for garnish

Optional toppings:

  • Crispy fried onions
  • Extra sour cream
  • Chopped green onions

Instructions

  1. Preheat your oven to 350°F and grease a 9×13-inch baking dish.
  2. Cook the egg noodles according to package directions until al dente. Drain and set aside.
  3. In a large skillet over medium-high heat, cook the ground beef until browned, breaking it apart as it cooks. This should take about 6-8 minutes.
  4. Add the diced onion to the beef and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  5. In a large mixing bowl, combine the mashed potatoes, 1 cup of shredded cheddar, sour cream, cottage cheese, and melted butter. Mix until smooth and creamy.
  6. Add the cooked noodles to the potato mixture along with the beef and onions. Season with salt, pepper, and garlic powder, then stir everything together until well combined.
  7. Pour the mixture into your prepared baking dish and spread it evenly. Top with the remaining cup of cheddar cheese.
  8. Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
  9. Let the casserole rest for 5-10 minutes before serving. Garnish with fresh parsley and any optional toppings you like.
