For the casserole:
- 1 pound egg noodles
- 1½ pounds ground beef
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 cups mashed potatoes (leftovers work great)
- 2 cups shredded cheddar cheese, divided
- 1 cup sour cream
- 1 cup cottage cheese
- ½ cup butter, melted
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- Fresh parsley for garnish
Optional toppings:
- Crispy fried onions
- Extra sour cream
- Chopped green onions
Instructions
- Preheat your oven to 350°F and grease a 9×13-inch baking dish.
- Cook the egg noodles according to package directions until al dente. Drain and set aside.
- In a large skillet over medium-high heat, cook the ground beef until browned, breaking it apart as it cooks. This should take about 6-8 minutes.
- Add the diced onion to the beef and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
- In a large mixing bowl, combine the mashed potatoes, 1 cup of shredded cheddar, sour cream, cottage cheese, and melted butter. Mix until smooth and creamy.
- Add the cooked noodles to the potato mixture along with the beef and onions. Season with salt, pepper, and garlic powder, then stir everything together until well combined.
- Pour the mixture into your prepared baking dish and spread it evenly. Top with the remaining cup of cheddar cheese.
- Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
- Let the casserole rest for 5-10 minutes before serving. Garnish with fresh parsley and any optional toppings you like.
