Creamy overnight chia seed pudding oatmeal made in one jar with no cooking required.

Ingredients

Scale
  • 1 cup rolled oats
  • 3 tablespoons chia seeds
  • 1 1/2 cups milk of choice (dairy, almond, oat, or coconut)
  • 1/2 cup plain Greek yogurt (optional, for extra creaminess)
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt

Topping ideas:

  • Fresh berries or sliced banana
  • A spoonful of peanut or almond butter
  • Chopped nuts, coconut flakes, or granola for crunch

Instructions

  1. Add the rolled oats, chia seeds, cinnamon, and salt to a large jar or bowl and stir to combine.
  2. Pour in the milk, then add the Greek yogurt, maple syrup, and vanilla.
  3. Stir everything together until the mixture looks even and the chia seeds are spread throughout.
  4. Wait a couple of minutes, then give it one more good stir to break up any chia clumps that have started to gel.
  5. Cover the jar and refrigerate for at least 4 hours, or overnight for the best texture.
  6. In the morning, stir the oats and check the thickness.
  7. If it feels too thick, loosen it with a splash of milk until it reaches the consistency you like.
  8. Divide into two bowls or jars, add your toppings, and serve cold, or warm it gently if you prefer it hot.
