Ingredients

  • 1 lb shrimp, peeled and deveined
  • 12 oz Andouille sausage, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Chopped parsley for garnish
  • Cooked rice for serving

Instructions

  1. In a large skillet, heat olive oil over medium-high heat.
  2. Add sliced Andouille sausage to the skillet and cook until browned, about 4-5 minutes.
  3. Add sliced bell peppers and onion to the skillet. Sauté for 3-4 minutes until softened.
  4. Add minced garlic and Cajun seasoning to the skillet. Cook for 1 minute until fragrant.
  5. Add shrimp to the skillet and cook until pink and opaque, about 2-3 minutes.
  6. Season with salt and pepper to taste.
  7. Garnish with chopped parsley and serve the Cajun shrimp and sausage skillet over cooked rice.
