- 4 medium sweet potatoes
- 2 cups shredded cooked chicken (rotisserie or cooked chicken breast)
- 1/2 cup buffalo sauce
- 1/4 cup blue cheese crumbles
- 2 tablespoons chopped green onions
- Ranch or blue cheese dressing for serving (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Scrub the sweet potatoes clean and prick them all over with a fork.
- Place the sweet potatoes on a baking sheet and bake for 45-60 minutes, or until tender when pierced with a fork.
- While the sweet potatoes are baking, in a mixing bowl, combine shredded chicken and buffalo sauce, tossing until chicken is well coated.
- Once the sweet potatoes are cooked, remove them from the oven and let them cool slightly.
- Slice each sweet potato lengthwise and fluff the insides with a fork.
- Stuff each sweet potato with the buffalo chicken mixture.
- Top each stuffed sweet potato with blue cheese crumbles and chopped green onions.
- Serve hot with ranch or blue cheese dressing on the side, if desired.
