  • 4 medium sweet potatoes
  • 2 cups shredded cooked chicken (rotisserie or cooked chicken breast)
  • 1/2 cup buffalo sauce
  • 1/4 cup blue cheese crumbles
  • 2 tablespoons chopped green onions
  • Ranch or blue cheese dressing for serving (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Scrub the sweet potatoes clean and prick them all over with a fork.
  3. Place the sweet potatoes on a baking sheet and bake for 45-60 minutes, or until tender when pierced with a fork.
  4. While the sweet potatoes are baking, in a mixing bowl, combine shredded chicken and buffalo sauce, tossing until chicken is well coated.
  5. Once the sweet potatoes are cooked, remove them from the oven and let them cool slightly.
  6. Slice each sweet potato lengthwise and fluff the insides with a fork.
  7. Stuff each sweet potato with the buffalo chicken mixture.
  8. Top each stuffed sweet potato with blue cheese crumbles and chopped green onions.
  9. Serve hot with ranch or blue cheese dressing on the side, if desired.
