Instructions
- Start by washing and hulling the strawberries. Roughly chop them into smaller pieces to make blending easier.
- In a blender or food processor, combine the chopped strawberries, balsamic vinegar, honey, Dijon mustard, salt, and pepper. Blend until the mixture is smooth.
- While the blender is running, slowly drizzle in the olive oil. This helps to emulsify the dressing, giving it a creamy texture.
- Taste the vinaigrette and adjust the seasoning as needed. If you prefer a sweeter dressing, add a bit more honey. For more acidity, increase the balsamic vinegar.
- Transfer the strawberry vinaigrette to a jar or airtight container and refrigerate. It will keep for up to one week.
