This easy strawberry vinaigrette dressing combines fresh strawberries, balsamic vinegar, honey, and Dijon mustard for a sweet and tangy flavor. Ready in 10 minutes!

Ingredients

  • 1 cup fresh strawberries (hulled and roughly chopped)
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey or maple syrup (for a vegan option)
  • 1/4 cup olive oil
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Start by washing and hulling the strawberries. Roughly chop them into smaller pieces to make blending easier.
  2. In a blender or food processor, combine the chopped strawberries, balsamic vinegar, honey, Dijon mustard, salt, and pepper. Blend until the mixture is smooth.
  3. While the blender is running, slowly drizzle in the olive oil. This helps to emulsify the dressing, giving it a creamy texture.
  4. Taste the vinaigrette and adjust the seasoning as needed. If you prefer a sweeter dressing, add a bit more honey. For more acidity, increase the balsamic vinegar.
  5. Transfer the strawberry vinaigrette to a jar or airtight container and refrigerate. It will keep for up to one week.
