This Southern tomato pie combines fresh, juicy tomatoes with savory herbs, melted cheeses, and a creamy mayonnaise mixture—all nestled in a flaky pre-baked pie crust. Perfect for breakfast, brunch, lunch, or dinner!

Ingredients

  • 1 pre-baked 9-inch pie crust (homemade or store-bought)
  • 4 large ripe tomatoes, sliced
  • 1 teaspoon salt
  • 1/2 cup chopped fresh basil
  • 1/2 cup chopped green onions
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 3/4 cup mayonnaise
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • Optional: 1/2 cup cooked and crumbled bacon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Slice the tomatoes and place them in a single layer on paper towels. Sprinkle with salt and let them sit for about 10 minutes to draw out excess moisture. Pat the tomatoes dry with additional paper towels.
  3. In the pre-baked pie crust, layer the tomato slices, basil, and green onions. For extra flavor, you can also add a layer of cooked and crumbled bacon.
  4. In a medium bowl, combine the shredded mozzarella, shredded cheddar, mayonnaise, black pepper, and garlic powder. Stir until well mixed.
  5. Spread the cheese and mayonnaise mixture evenly over the top of the tomatoes, covering them completely. (Alternatively, you can switch these steps, and place the tomatoes on top of the cheese mixture if you prefer.)
  6. Place the pie in the preheated oven and bake for 30-40 minutes, or until the top is golden brown and bubbly.
