Savory Stuffing Waffles with Turkey Gravy

Ingredients

For the Stuffing Waffles:

  • 4 cups leftover stuffing (any kind)
  • 2 large eggs
  • ½ cup turkey or chicken stock
  • Nonstick cooking spray

For the Turkey Gravy:

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups turkey stock (or chicken stock)
  • 1 cup shredded leftover turkey (optional)
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the leftover stuffing, eggs, and turkey stock. Mix well until the stuffing is moist but not overly wet. The mixture should hold together when pressed.
  2. Heat your waffle iron to medium-high and lightly coat it with nonstick cooking spray.
  3. Scoop about 1 cup of the stuffing mixture (or enough to fill your waffle iron) into the preheated waffle maker. Close the lid and cook for 5-7 minutes, or until the waffle is golden brown and crispy. Repeat with the remaining batter.
  4. In a medium saucepan, melt the butter over medium heat. Stir in the flour and whisk continuously for 1-2 minutes, until the mixture is golden and smooth.
  5. Gradually pour in the turkey stock, whisking constantly to prevent lumps. Bring the mixture to a simmer and cook until thickened, about 5 minutes.
  6. If using, stir in the shredded leftover turkey and let it heat through. Season the gravy with salt and pepper to taste.

Notes

  • If the stuffing mixture feels too dry, add a bit more turkey stock or even a splash of milk. If it’s too wet, add a little extra stuffing or breadcrumbs to help it bind together.
  • If you don’t have turkey stock, you can substitute with chicken stock or broth. You can also add a dash of soy sauce or Worcestershire sauce to enhance the gravy’s umami flavor.
