Ingredients

  • 1 lb shrimp, peeled and deveined
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 3 cloves garlic, minced
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • Sesame seeds and chopped green onions for garnish
  • Cooked rice or noodles for serving

Instructions

  1. Season shrimp with salt and pepper.
  2. Heat olive oil in a large skillet or wok over medium-high heat. Add shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp from skillet and set aside.
  3. In the same skillet, add more olive oil if needed. Add bell peppers, broccoli, and snap peas. Stir-fry for 3-4 minutes until vegetables are crisp-tender.
  4. Add minced garlic to the skillet and cook for 1 minute until fragrant.
  5. In a small bowl, whisk together honey, soy sauce, rice vinegar, and sesame oil. Pour the sauce over the vegetables in the skillet.
  6. Return the cooked shrimp to the skillet and toss everything together until well coated in the sauce.
  7. Serve the honey garlic shrimp stir fry over cooked rice or noodles. Garnish with sesame seeds and chopped green onions.
