A simple, versatile flatbread made with just red lentils and water as the base ingredients. These gluten-free flatbreads are pliable enough for wraps, sturdy enough for pizza bases, and can be customized with both sweet and savory flavors.

Ingredients

Scale
  • 1 cup red lentils
  • 1¼ cups water
  • Salt and pepper to taste
  • Garlic powder to taste (optional)
  • Olive oil for cooking

Instructions

  1. Grind dry red lentils in a blender, food processor, or Vitamix with dry container until they reach a flour-like consistency.
  2. Transfer the lentil flour to a mixing bowl.
  3. Add 1¼ cups water and desired seasonings (salt, pepper, garlic powder).
  4. Mix well, breaking up any clumps that form.
  5. Let the mixture soak for 10-30 minutes (10 minutes minimum). The batter will thicken to a pancake batter consistency.
  6. Heat a non-stick pan over medium heat and add a small amount of olive oil.
  7. Pour a portion of batter into the pan and spread it into a thin circle.
  8. Cook until bubbles form around the edges and the edges start to brown.
  9. Flip and cook for about one minute on the other side.
  10. Repeat with remaining batter.

Notes

When adding wet ingredients (like relishes), reduce the amount of water accordingly to maintain pancake batter consistency.
