- 1 pound ground beef
- 1 onion, chopped
- 1 can of corn, drained
- 1 can of black beans, rinsed and drained
- 1 can of diced tomatoes, with juice
- 1 can of tomato sauce
- 1 can of green chilies
- 2 cups of water or beef broth
- 1 packet of taco seasoning mix
- Optional toppings: shredded cheese, sour cream, tortilla chips, avocado, cilantro
Instructions
- Brown the Beef: In a large pot, cook the ground beef over medium heat until it’s no longer pink. Break it apart with a spoon as it cooks.
- Add Aromatics: Toss in the chopped onion and cook until it’s soft and translucent.
- Mix in the Goodies: Add the corn, black beans, diced tomatoes, tomato sauce, green chilies, and water or beef broth to the pot. Stir everything together.
- Season: Sprinkle the taco seasoning over the mixture and stir until well combined.
- Simmer: Bring your soup to a boil, then reduce the heat and let it simmer for about 20 minutes to blend all the flavors together.
- Serve: Ladle the soup into bowls and add your favorite toppings like shredded cheese, a dollop of sour cream, crushed tortilla chips, diced avocado, or fresh cilantro.
