This taco soup is a hearty, flavorful dish that combines the best of both worlds—the comfort of a warm soup and the zesty taste of tacos. It’s perfect for those busy weeknights when you want something quick, easy, and satisfying.

Ingredients

Scale
  • 1 pound ground beef
  • 1 onion, chopped
  • 1 can of corn, drained
  • 1 can of black beans, rinsed and drained
  • 1 can of diced tomatoes, with juice
  • 1 can of tomato sauce
  • 1 can of green chilies
  • 2 cups of water or beef broth
  • 1 packet of taco seasoning mix
  • Optional toppings: shredded cheese, sour cream, tortilla chips, avocado, cilantro

Instructions

  1. Brown the Beef: In a large pot, cook the ground beef over medium heat until it’s no longer pink. Break it apart with a spoon as it cooks.
  2. Add Aromatics: Toss in the chopped onion and cook until it’s soft and translucent.
  3. Mix in the Goodies: Add the corn, black beans, diced tomatoes, tomato sauce, green chilies, and water or beef broth to the pot. Stir everything together.
  4. Season: Sprinkle the taco seasoning over the mixture and stir until well combined.
  5. Simmer: Bring your soup to a boil, then reduce the heat and let it simmer for about 20 minutes to blend all the flavors together.
  6. Serve: Ladle the soup into bowls and add your favorite toppings like shredded cheese, a dollop of sour cream, crushed tortilla chips, diced avocado, or fresh cilantro.
