For the Beef and Potatoes:

  • 2 pounds beef tips (or stew meat)
  • 1.5 pounds baby potatoes (halved if large)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika (optional)

For the Garlic Butter Sauce:

  • 1/2 cup unsalted butter (1 stick)
  • 6 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme (or 1 tablespoon fresh)
  • 1 teaspoon dried rosemary (or 1 tablespoon fresh)
  • 1/2 cup beef broth
  • 1 tablespoon cornstarch (optional, for thickening)

Instructions

  1. In a large skillet, heat olive oil over medium-high heat.
  2. Season the beef tips with salt, pepper, onion powder, and smoked paprika.
  3. Sear the beef tips in batches, browning them on all sides. This step locks in flavor but is optional if you’re short on time.
  4. Add the baby potatoes to the crockpot, followed by the seared beef tips.
  5. In the same skillet (or a small saucepan), melt the butter over medium heat.
  6. Add the minced garlic and sauté for 1-2 minutes, until fragrant.
  7. Stir in Worcestershire sauce, thyme, rosemary, and beef broth. Bring the mixture to a simmer.
  8. (Optional) If you prefer a thicker sauce, whisk the cornstarch with 2 tablespoons of water to make a slurry. Add this to the sauce and stir until slightly thickened.
  9. Pour the garlic butter sauce over the beef tips and potatoes in the crockpot.
  10. Cover and cook on low for 6-8 hours or high for 3-4 hours, until the beef is tender and the potatoes are cooked through.
  11. Once cooked, give the dish a gentle stir to coat everything in the sauce.
  12. Garnish with fresh parsley if desired.
  13. Serve hot and enjoy this comforting meal with a side of crusty bread or a fresh salad.
