Crockpot Bourbon Chicken is a mouthwatering dish featuring tender chicken thighs simmered in a rich, savory bourbon sauce with a perfect balance of sweet, tangy, and slightly spicy flavors. The slow cooking process creates a luscious, thickened sauce that perfectly coats each bite!

  • 2 lbs boneless, skinless chicken thighs (cut into bite-sized pieces)
  • 1/2 cup bourbon (you can substitute with apple juice if preferred)
  • 1/4 cup soy sauce (low-sodium preferred)
  • 1/4 cup ketchup
  • 1/4 cup brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger
  • 1/2 teaspoon red pepper flakes (optional for a spicy kick)
  • 2 tablespoons cornstarch
  • 2 tablespoons water

Instructions

  1. Place the chicken thighs (cut into bite-sized pieces) in the bottom of the slow cooker.
  2. In a medium bowl, whisk together the bourbon, soy sauce, ketchup, brown sugar, apple cider vinegar, garlic powder, ginger, and red pepper flakes (if using). Pour this mixture over the chicken in the slow cooker.
  3. Cover the slow cooker and cook on low for 4 to 5 hours or until the chicken is cooked through and tender. Alternatively, you can cook on high for 2 to 3 hours.
  4. Once the chicken is fully cooked, make a slurry to thicken the sauce. In a small bowl, mix the cornstarch with water until smooth. Add this mixture to the slow cooker and stir to combine.
  5. Cover and cook for an additional 10-15 minutes on high until the sauce thickens to your desired consistency.
  6. Serve the bourbon chicken over steamed rice, noodles, or your favorite side dish. Garnish with chopped green onions or sesame seeds if desired.
