Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 8 ounces cooked pasta or roasted vegetables

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook until golden brown on both sides and cooked through, about 6-7 minutes per side. Remove chicken from skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  4. Pour in chicken broth and scrape up any browned bits from the bottom of the skillet. Let it simmer for 2 minutes.
  5. Stir in heavy cream, Parmesan cheese, and Italian seasoning. Cook, stirring occasionally, until the sauce thickens, about 5 minutes.
  6. Return the cooked chicken to the skillet and spoon the sauce over the chicken.
  7. Serve the creamy garlic Parmesan chicken over cooked pasta or roasted vegetables. Garnish with additional Parmesan cheese and fresh parsley if desired.
