These cranberry brie bites are the ultimate easy appetizer for any gathering. Flaky puff pastry cups are filled with creamy melted brie and topped with tangy cranberry sauce, then drizzled with honey for the perfect sweet-savory balance.

Ingredients

  • 1 sheet frozen puff pastry, thawed
  • 8 oz brie cheese, cut into small cubes
  • 1/3 cup cranberry sauce (homemade or canned)
  • 2 tablespoons honey
  • Fresh rosemary or thyme for garnish (optional)
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 375°F and lightly grease a mini muffin tin.
  2. Roll out the puff pastry on a lightly floured surface. Cut into 24 squares, approximately 2 inches each.
  3. Press each pastry square gently into the muffin tin cups, creating a small cup shape. The corners will stick up a bit, which looks charming once baked.
  4. Place a cube of brie in the center of each pastry cup. Add about 1/2 teaspoon of cranberry sauce on top of the cheese.
  5. Brush the exposed pastry edges with the beaten egg. This gives them that gorgeous golden color.
  6. Bake for 15-18 minutes, until the pastry is puffed and golden brown. The cheese should be melted and bubbly.
  7. Remove from the oven and let cool in the pan for 2-3 minutes. They’ll be extremely hot, so resist the urge to pop one in your mouth immediately.
  8. Carefully transfer to a serving platter. Drizzle with honey and garnish with fresh herbs if desired.
  9. Serve warm and watch them vanish.
