5-Minute Cornbread Muffin Mix

These golden, tender cornbread muffins have the perfect balance of sweetness and a wonderful crumbly texture. They’re quick to prepare from your homemade mix and make a wonderful side for soups, chili, or enjoyed warm with a simple pat of butter.

Ingredients

Scale

For Dry Mix:

  • 1/4 tsp salt
  • 2/3 cup flour
  • 1/2 cup fine cornmeal
  • 3 tbsp sugar
  • 1 tbsp baking powder

When Ready to Make:

  • 1 egg
  • 1/3 cup milk or water
  • 2 tbsp melted butter

Instructions

  1. Add salt to the bottom of a pint-sized mason jar. Layer in flour, cornmeal, sugar, and baking powder
  2. For long-term storage (over 6 months), vacuum seal the jar. Tighten the lid securely.
  3. When ready to bake, preheat oven to 400°F. Grease or line a muffin tin.
  4. Pour jar of dry mix into a bowl. Add egg, milk/water, and butter.
  5. Stir in any optional add-ins.
  6. Divide into 6 muffin cups.
  7. Bake for 15-20 minutes until golden.

  • Chives or green onion
  • Herbs or garlic powder
  • Crumbled bacon
