This chicken and rice dish is an excellent way to stretch meat, filling bellies with just one chicken breast. Don't let the rice fool you—it is LOADED with flavor!

  • Total Time: 40 minutes

Ingredients

Scale
  • 1 stick butter
  • 1/2 of a white or yellow onion, diced
  • 1 cup rice, heaping
  • 1 1/2 cups chicken broth
  • 1 envelope Lipton onion soup mix
  • 1 1/2 cups water
  • 1 chicken breast

Instructions

  1. In a skillet set to low-medium heat, melt the stick of butter.
  2. Add the diced onions and rice, and stir to combine. Cook for 2-3 minutes.
  3. Add the chicken broth.
  4. Mix the envelope of onion soup mix with 1 1/2 cup of water. Whisk well, then add to the skillet.
  5. Stir ingredients to combine.
  6. Cut the chicken breasts into thirds, and place in a blender. Blend well until you get a “ground” chicken consistency. You will need to pause and scrape down the sides of the blender using a spatula. See video for detail. Alternatively, you can dice the chicken finely.
  7. Add to the skillet, and mix well.
  8. Allow skillet to come up to boiling.
  9. Lower to a simmer. Place the lid, and allow to cook for approximately 20 minutes.
  10. It is done when the liquid has fully incorporated into the rice, and the chicken is cooked through. Enjoy!
